Start Your Spring Party Right With These Yummy Appetizers!

With crisp cool air, birds chirping happy tunes, and nature getting back to its lush green color, Spring is definitely a perfect time to get together with family and friends - may it be for a weekend brunch, a Sunday barbecue, or simply a mid-week dinner to help you get by until weekend comes.

This week, we're featuring yummy do recipes that would make your Spring party truly delectable! Let's start off with appetizers that are pleasing to the eyes, fresh to the taste, but are surprisingly easy to make.

Ali of Gimmesomeoven has a fresh, palate-exciting recipe for Black Bean Mango Salsa Cups. The edible cups are actually made from wanton wrappers baked pressed on cupcake tins until golden and crispy.

The crispy wanton cups are then filled with a simple salad made with black beans, mangoes, tomatoes, and corn, seasoned with cumin and sprinkled with chopped green onions and cilantro. Every bite is flavor party in itself!

Equally colorful is the Mexican Spring Rolls recipe by Nagi of Recipe Tin Eats. This recipe uses egg roll wrappers to hold all its bold flavors and textures together. A delicious filling made with pulled pork, cheese, corn, black beans, and red bell peppers is seasoned with paprika, cumin, onion powder, and coriander leaves. 

The blog entry offers a detailed technique on how to put roll the filled wrappers so that the ends are tucked before popping the logs into the oven.

If using wanton or egg roll wrappers intimidate you, and perhaps you'll prefer recipe that uses the simplest and most uncomplicated appetizer base ever - bruschetta! Despite its fabulous Italian name, bruschetta is actually just pieces of grilled bread topped with garlic and olive oil.

Kelly of Eat Yourself Skinny has a simple recipe for Tomato and Basil Bruschetta. A french baguette is but into thin pieces, topped with a simple salad of tomatoes, basil, garlic, olive oil and balsamic vinegar, and then popped in the oven to toast.

TIP: Using a silicone baking mat when baking spring rolls or toasting bruschetta will cut your cleaning time in half!
