National Egg Month: The Proper Way Of Cooking Eggs

Eggs are a staple in many homes. It's quick to cook and is a good source of protein. As much as eggs are appreciated in home kitchens, so is it revered in the professional culinary world. Hailed as a versatile ingredient, eggs are required in many savory and sweet recipes.

In celebration of the National Egg Month this May, we'll be featuring various recipes that feature eggs' versatility in the kitchen. But before we go into elaborate dishes were eggs are used as a binder, thickener, emulsifier or glaze, let's start with the basics of cooking an egg.

Boiling eggs at home may seem to be a very simple task that doesn't need any attention. But did you know that by tweaking a few steps in the cooking process, you can come up with the best tasting boiled eggs right in your own kitchen?

According to The Kitchn, eggs should be put in a pot with enough cold water to cover it (1 inch water allowance over the eggs) before bringing to a boil. Once boiling, the heat should be turned off and depending on the consistency desired, the eggs are left in a covered pot for a certain period of time: three minutes for runny eggs, six minutes for medium, and 10 minutes or more for hard-boiled eggs.

Now, on to sunny side up eggs. Marc of No Recipes has a detailed post on step-by-step instructions in cooking sunny side up eggs with perfect yolks. Interestingly, Marc suggests using a cold non-stick pan to cook the eggs in.

Scrambled eggs is another quick fix in the kitchen. According to Bon Appetit, to make great scrambled eggs, you must first start with fresh eggs. The best way to incorporate air into the eggs is by whipping them up in a blender. When it comes to making scrambled eggs, butter is better than oil as it allows the eggs to retain moisture.

If you're in the mood for something simple but unusually special, it may be a great idea to try Egg Nests, which is somewhat a puffed up version of a sunny side up. The egg whites and egg yolks are separated. The egg whites are beaten until stiff peaks form. Grated Gruyere cheese is folded in. Mounds of the beaten egg whites are formed on baking sheets and popped in the oven. Half way through cooking, egg yolks are placed on top of each mound, and the egg nests are cooked for a while longer.

TIP: Use a silicone mat when baking egg nests to make it easier to take them off the baking pan.
