Eggs Benedict is a staple brunch item on the menu of many restaurants. It's yummy, gooey, satisfying... and a little bit heavy on the budget. You might be surprised to learn that making Eggs Ben right in your own home is actually not that difficult.
Smoked Salmon Eggs Benedict from Damn Delicious
2 English muffins, split and toasted
4 slices smoked salmon
1 avocado, halved, seeded, peeled and sliced
2 poached eggs, for serving
For the hollandaise sauce:
3 large egg yolks
1 1/2 tablespoons freshly squeezed lemon juice
Pinch of cayenne pepper, optional
1/4 teaspoon salt
1 cup (2 sticks) unsalted butter, melted
The best part of making your own Eggs Benedict at home is, you can modify the protein on your sandwich. Instead of salmon and avocado, you can use chicken fillet or fried cheese.
Another twist on the common eggs and toast is Baked Birdies Nest by Mr. Breakfast. The vintage recipe was taken from a 1970's advertisement from the Egg Farmers of Ontario.
Baked Birdie In A Nest
The eggs are separated and the egg whites are beaten until stiff peaks form. A mound of beaten egg whites is placed on each bread and topped off with an egg yolk before baking in the oven.
Crazy Adventures in Parenting offers a more contemporary version of egg toast. The brunch grub is made extra special with melted cheese and butter.

TIP: Line the baking sheet with silicone mat when making cheesy baked egg toast to make it easier to take off the toast with melted cheese from the pan.
