Nat'l Egg Month: Egg Recipes For Dinner

Who says eggs are just for breakfast? There are tons of great dishes you can do with eggs to make spectacular dinner meals.

Let's start off with a delicious meatball recipe from the blog Cooking By The Book. They featured a dish called Meatballs with Hard-Boiled Eggs Inside from the book Nonna’s House by Jody Scaravella.

Meatballs with Hard-Boiled Eggs Inside From Nonna’s House by Jody Scaravella

1 cup fresh breadcrumbs
2 tablespoons olive oil, plus more for the baking sheet
½ cup minced onion
1 teaspoon minced garlic
⅓ pound lean ground beef
⅓ pound ground pork
⅓ pound ground veal
2 large eggs, lightly beaten
1 ounce Pecorino Romano, finely grated (about ¼ cup)
2 tablespoons minced fresh flat-leaf parsley
½ teaspoon salt
½ teaspoon freshly ground black pepper, plus more for serving
6 hard-boiled eggs, peeled
Green salad tossed with a light vinaigrette, for serving (optional)

Each meatball is a work of art with a fun surprise at the middle. You can make this dish with quail eggs if you want smaller meat balls.

Egg casseroles is another way to serve eggs at dinner. This recipe from The Perfect Pantry is a cheesy but healthy dish that will surely satisfy your family's palate as well as their nutritional needs.

1 medium onion, diced
2 cups roughly chopped broccoli florets
1/2 cup roughly chopped mushrooms (any variety; I like cremini)
8 large eggs
2 Tbsp nonfat milk
7 oz shredded cheese (I use fat-free mozzarella)
1 Tbsp dried thyme leaf, or 2 Tbsp fresh thyme leaves
1/4 tsp kosher salt
1/2 tsp fresh black pepper
Cooking spray

Bread bowls are not just for soups - they make good edible containters for baked eggs as well. Baked Tree published recipe for wheat rolls filled with eggs, cream, cheese, and herbs. The result is a hearty bread bowl dinner with a creamy, cheesy egg filling.

6 whole wheat rolls
6 Land o’ Lakes All-Natural Farm-Fresh Eggs
6 teaspoons cream
6 tablespoons Parmesan cheese
3 teaspoons fresh chives, chopped
3 teaspoons fresh parsley, finely chopped
1 teaspoon salt
1 teaspoon black pepper, freshly ground

TIP: Use a silicone baking mat when making Eggs Baked in Bread Bowls to make clean up a lot easier in case any eggs or melted cheese spill from the bread bowl during baking.
