Lovers of chocolate, mallows and nuts rejoice! It's National Rocky Road day today, and what better way to celebrate it than to treat yourself to glorious desserts made with the perfect combo of sweet, soft and crunchy.

According to ifood.tv, Rocky Road is a dessert flavor originating from USA consisting of chocolate, cream, marshmallows and toasted almonds. Rocky Road's popularity is huge - it is one of the most popular ice cream flavors in the US.

Rocky Road Cake from Your Cup of Cake
Ingredients
Chocolate Cake:
1 box Devil’s food cake mix
3 eggs
½ C. oil
1 C. milk or buttermilk
½ C. plain yogurt or sour cream
2 tsp. vanilla extract
1 ½ C. mini chocolate chips
Chocolate Buttercream:
2 ½ C. butter, softened
¾ C. unsweetened cocoa, powder
2 tsp. vanilla extract
¼ C. milk or sour cream
5-6 C. powdered sugar
Ganache:
½ C. chocolate chips
½ C. heavy whipping cream
Filling/Decoration:
2 C. marshmallows
2 C. walnuts or sliced almonds
½ C. chopped chocolate or chocolate chips

If you feel that making a fancy cake is too much laborous work in the kitchen, then you might find this Rocky Road brownies recipe more to your liking. It has a combination of white and dark chocolate chips, which would tickle the tongue of any chocoholic foodie.

Ingredients:
1 cup less 1 tablespoon all-purpose flour
¼ teaspoon baking powder
¼ teaspoon salt
4½ tablespoons unsalted butter
½ cup plus 1 tablespoon unsweetened cocoa powder
1¼ cups sugar
1 large egg
2 large egg whites
2 teaspoons vanilla extract
8 regular-size marshmallows
⅓ cup white chocolate chips
⅓ cup milk chocolate chips

 Here's another easy to whip up rocky road recipe - cookies with marshmallows, chocolate chips, nuts and Nutella! Now who could say no to that?

Ingredients:
1 stick butter, softened
1/4 cup granulated sugar
1/2 cup brown sugar
1/4 cup Nutella
1 (3.4 oz) package instant chocolate pudding mix
2 eggs
1 teaspoon vanilla extract
1 tsp baking soda
1/2 teaspoon baking powder
2-1/4 cups flour
1 cup chocolate chips
1 cup chopped nuts
1/2 cup Kraft Mallow Bits

Vegan & Gluten-Free Rocky Road Cookies from The Colorful Kitchen
Ingredients:
1 cup all purpose gluten-free flour
¼ tsp baking soda
¼ tsp baking powder
¼ cup cocoa powder
dash of salt
1 egg replacer
2 tsp vanilla extract
¼ cup vegan butter, melted
1 small banana, mashed
3-4 tbs agave
handful of chopped nuts 
handful of vegan mini marshmallows
handful of vegan chocolate chips

TIP: Use a silicone mat when baking cookies to make it easier to take the treats off the pan.
