Cheese works very well in paninis. Because panini requires grilling, cheese melts to perfection, embracing the bread all the other ingredient in a yummy, gooey, warm sandwich. 


Cast Iron Chicken Pesto and Mozzarella Panini Recipe (Kitchen Swagger)

This Cast Iron Chicken Pesto and Mozzarella Panini Recipe from Kitchen Swagger is a lovely recipe that uses a lovely combination of chicken, mozzarella, tomato, pesto and basil leaves. This tastes like a margherita pizza in a panini. The olive oil instead of butter gives this panini another ounce of Italian flavor.

  • 2 thinly sliced chicken breasts, flattened to 1/4 inch thick
  • 4 slices white panini bread
  • 4 slices fresh mozzarella cheese

  • 1 crusty loaf of bread , sliced

  • 8 slices mozzarella cheese (I used pre-sliced, you could also use fresh)
  • 3 large ripe tomatoes
  • 2 TBS balsamic vinegar

This panini is made delicious by two kinds of cheese, apple butter, thinly sliced apple, bacon, thyme and honey. Gourmet panini right in your own kitchen! 

"You’re going to butter some bread, layer it with apple butter, cheese, fresh apples, bacon, honey, and a sprinkle of fresh thyme (lemon thyme is my favorite) and then press everything together in a Panini press (this is my favorite). If you don’t have a Panini press, just make it on the stove top. No matter what, it’s going to be freaking-a-mazing."


  • 8 slices sourdough bread
  • 4 tablespoons butter, at room temperature

  • 1 1/2 cups shredded cheddar cheese

Ludy's Kitchen Cooking Tip: 

Panini doesn't always have to be made with Italian breads and fillings. Make it your own by using other types of bread such as tortilla, pita or even biscuits. You can also experiment with sweet fillings including fresh fruits, compotes or jams. 

Make cooking a lot easier and more enjoyable by using good quality silicone baking mats. Not only are silicone mats sturdy and durable. Because they're non-stick, you can also cut your clean-up time in half.
