Avocado Egg Salad Sandwich (Honey, What's Cooking?)

Deviled Egg Salad Sandwiches (Julie's Eats and Treats)

Julie's Eats and Treats has a recipe called Deviled Egg Salad Sandwiches and it's pretty tasty! Deviled eggs filling is made by mixing together hard-boiled eggs, mayo, white vinegar, mustard, onion and paprika. You can add in some greens to add a dose of fiber to your sandwich.

  • 6 eggs hard boiled & shelled
  • 4 Tbsp mayo

  • 1/2 tsp Salt
  • 1/4 tsp pepper
  • 1/4 tsp smoked paprika
  • 8 pieces bread

Chicken and Egg Sandwich with Hot Honey Butter (Girl in the Red Kitchen)

For the fried chicken

  • 4 skinless, boneless chicken cutlets (no more than 1 inch thick)
  • 1 cup buttermilk
  • 1/2 teaspoon cayenne pepper
  • 1 cup all-purpose flour
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • Vegetable oil for frying

For the hot honey butter

  • 8 tablespoons (1/2 cup) unsalted butter, softened
  • 1/4 cup honey
  • 1-2 teaspoons hot sauce
  • 4 English muffins
  • 4 large eggs, fried
  • additional honey (hot honey recommended) for drizzling

Ludy's Kitchen Cooking Tip: 

Want to know if an egg is fresh? All it takes is a bowl of water. Place the egg on the bowl - if it lays on its side at the bottom, it's fresh. But if it stands upright at the bottom, you could still eat it but make sure to eat it right away. If an egg floats on water, it's past its prime and you should throw it away.

Make cooking a lot easier and more enjoyable by using good quality silicone baking mats. Not only are silicone mats sturdy and durable. Because they're non-stick, you can also cut your clean-up time in half.
