A lot of people may think that they don't have the luxury of time to prepare a hot breakfast everyday. However, all it usually takes is a bit of creativity and ingenuity to be able to enjoy a healthy and delicious breakfast without having to wake up an hour earlier than usual to slave away in the kitchen.

Breakfast muffins are a great way make-ahead morning treats for the family. Just make a batch on a Sunday night, pop in the freezer, and heat one or two in the microwave each morning.  


Black Bean and Sweet Potato Egg Muffins (My Pennywise Life)

My Pennywise Life has a recipe called Black Bean and Sweet Potato Egg Muffins. This breakfast muffin is made even more flavorful by spices like cumin and paprika. Black beans and sweet potatoes make this breakfast muffin rich in fiber and protein, making it a fantastic meal to start your day with! 

"My favorite thing about this recipe is that it’s a healthy make-ahead option. Cook a batch at the beginning of the week and pop them in the fridge or freezer for a quick, ready-to-go breakfast, lunch or snack!"


  • 1 TBS olive oil
  • 1 sweet potato (cut into ½ inch cubes)
  • 1 can black beans, drained and rinsed
  • 1 tsp cumin
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • 1 tsp salt
  • 2 TBS minced garlic
  • 10 eggs

Egg and Cheese Mini Muffins (The Seasoned Mom)

The Seasoned Mom has a recipe called Egg and Cheese Mini Muffins which is a real treat for cheese lovers. All it takes it just three main ingredients - eggs, milk and cheese. And though the recipe requires grated cheddar cheese, you can easily replace it with your favorite kind, be it Edam, Monterey Jack or whatever else you fancy. 

"These Egg and Cheese Mini Muffins are my solution to hectic weekdays when I don’t have time (or any desire) to stand at the stove and make scrambled eggs for breakfast.  Bake a batch, put them in a Ziploc bag in the freezer, and just microwave (or toast) one at a time when you need them.  No defrosting necessary!"


  • 6 large eggs
  • 3 tablespoons whole milk
  • ½ teaspoon salt (NOTE: some folks have commented that the addition of the salt makes these too salty, so feel free to omit it or decrease the amount!)
  • 1/8 teaspoon pepper
  • 1/3 cup grated cheddar cheese

Make-Ahead Breakfast Muffins (Foxes Love Lemons)

This Make-Ahead Breakfast Muffins from Foxes Love Lemons is such a treat, it's a complete meal in itself. It's got turkey bacon, mushrooms, kale, tomatoes, cheese, milk and eggs - it's a breakfast muffin that will surely make your morning brighter and a lot more flavorful!

  • 4 slices turkey bacon, cut into 1/4-inch strips
  • 8 cremini (baby bella) mushrooms, thinly sliced
  • 1 cup packed chopped kale
  • 2 tablespoons finely chopped sundried tomatoes
  • 6 eggs
  • 1/4 cup milk
  • 1/4 cup Parmesan cheese
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • Pinch of nutmeg
  • 2 tablespoons pumpkin seeds (optional)

Ludy's Kitchen Cooking Tip: 

There's no need to thaw frozen breakfast egg muffins before heating them in the microwave. You can also reheat the muffins in an oven toaster if you prefer them a little dryer. 


Make cooking a lot easier and more enjoyable by using good quality silicone baking mats. Not only are silicone mats sturdy and durable. Because they're non-stick, you can also cut your clean-up time in half.
