Peanut Butter and Pickle Sandwich (Joy the Baker)

This Peanut Butter and Pickle Sandwich recipe from Joy the Baker may sound as a surprise to some, but is actually worth a try! The sweet nuttiness of peanut butter combines well with the sweet tartness of pickles and the wholesome sweetness of maple syrup. Love it or hate it.

"The peanut butter is our earthy base flavor. The pickles are a combination of sweet and tart so they know how to play nice with base flavors. Maple syrup compliments the saltiness of the peanut butter and pickles and…. you’re still looking at me like I’m crazy. I get it. I’m weird. You’re either on the awkward-elbow-dance-train, or you’re not."

  • 2 slices whole grain bread (extra yummy with seeded bread)
  • 3 to 4 tablespoons all-natural peanut butter
  • 6 to 8 slices bread and butter pickles
  • 1 tablespoon pure maple syrup

Ludy's Kitchen Cooking Tip:

Want to make your very own peanut butter? It's not as hard as you might think! It's all about throwing a cup or two of roasted peanuts in a food processor and pulsing until creamy. You can also add in your choice of sweeteners and flavors like salt, Stevia, honey, cinnamon, or even a few teaspoons of health oil for texture consistency.

Make cooking a lot easier and more enjoyable by using good quality silicone baking mats. Not only are silicone mats sturdy and durable. Because they're non-stick, you can also cut your clean-up time in half.
