Mediterranean Veggie Sandwich (The Edgy Veg)

This Mediterranean Veggie Sandwich from The Edgy Veg is yummy, filling sandwich teeming with wholesome flavors! The main star of this sandwich is roasted sweet potato, made delicious with olive oil and cumin. The red peppers, basil and alfalfa sprouts perfectly complement the flavors of this dish!

Roasted Sweet Potato:

  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • Pinch of salt
  • Freshly cracked black pepper
  • 2 medium sweet potatoes, cut into ¼- 1/2 inch thick slices


  • 8 slices of your favourite sandwich bread, toasted
  • ½ cup hummus
  • 8 slices of jarred, roasted red peppers
  • Alfalfa sprouts

Lemon Edamame Avocado Sandwiches (Love & Lemons)

Love & Lemons has a great recipe called Lemon Edamame Avocado Sandwiches that is such a fresh and healthy number! The filling is made of edamame, cilantro, lemon juice, scallions, garlic and olive oil - you could just imagine what flavor party that is! Top that with pickled onions, avocado, cucumber and greens. Yum!

Pickled onions:

  • ½ small red onion, very thinly sliced

  • generous pinch of sea salt
  • water, as needed

Lemon-edamame sandwich filling:

  • 1½ cups edamame
  • ¼ cup cilantro
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon chopped scallions
  • ½ small garlic clove or a pinch of garlic powder
  • 2 tablespoons olive oil
  • 1 to 3 tablespoons water
  • ½ teaspoon sea salt, more to taste

For the sandwiches:

  • 8 slices eureka! Organic Top Seed Bread
  • cucumber slices
  • 1 small avocado, sliced
  • Pickled onions
  • 2 cups of arugula and/or micro greens

There are tons of vegan sandwich dressings that you can use on vegan sandwiches. Some of these options are  olive paste, pesto, avocado, relish, and sundried tomato paste. These dressings lend moisture and flavor to sandwiches sans the dairy.

Make cooking a lot easier and more enjoyable by using good quality silicone baking mats. Not only are silicone mats sturdy and durable. Because they're non-stick, you can also cut your clean-up time in half.
