Gluten-Free Chocolate Chip Cookies: Guiltless Classic Comfort Food

Going gluten-free doesn't mean having to sacrifice food that you've always loved - this is what we've learned from Erin of My Baking Addiction who taught us a recipe for Gluten-Free Chocolate Chip Cookies.

The benefits of a gluten-free diet has gained more and more attention over the past few years. Prevention earlier mentioned in an article that though sufferers of an autoimmune digestive ailment called Celiac Disease are the main subscribers of gluten-free diet, many health buffs have also been choosing to avoid gluten in an effort to eat better. 

There is really nothing like a plate of chocolate chips cookies to melt your stress away after a long day. This healthier version gives the same satisfaction sans the guilt.

Erin's recipe uses a combination of white rice flour, potato starch and tapioca flour to replace regular flour.

People who would want to make this recipe even healthier may opt to use calorie-free sweeteners like stevia or natural coco sugar to sweeten the cookies. It may also be not a bad idea to use chopped sugar-free chocolate bars in place of the semi-sweet chocolate chips.

Tip: when using sticky add-ons like chocolate in your cookies, it is best to use silicone baking mats to keep the finished product evenly baked. Non-stick mats also allow cookies to come right off from the baking pan without much effort.
