Today's featured St. Patrick's Day food is something meaty, flavor-filled, and definitely worth making in your own kitchen whether it's someone's feast day or not - Irish Beef Pasty!
Most people might be familiar with Cornish Pasties, which is one of the most popular of British hand pies. According to the Cornish Pasty Association (yes, it actually exists), a proper Cornish Pasty consists of a minimum of 25% vegetables and a minimum of 12.5% meat. This means the amount of vegetables is more than the meat.
Heather Cheney's Beef Irish Pasty more or less has the same composition. Her recipe, as published in Heather Likes Food, is basically stuffed with beef and potatoes, seasoned with onions, coriander, and parsley.
If you're having a St. Patrick's Day party, you can make the hand pies ahead of time and pop them in the oven as your guests start to arrive. This can also be the perfect food to bring on picnics. It's a meal enveloped in a crust - hassle free and no clean up needed!
Tip: using a silicone baking mat when making hand pies will help make the pasties come right off the pan easily without breaking the crust.
