Kathy Strahs of Panini Happy has a good recipe for grilled cheese croutons, which she originally paired with Grilled Tomato Soup. The croutons are not only cheesy, but extremely flavorful as well, thanks to thyme, basil and chives.
TIP: If you don't have a panini maker, you can make the cheese sandwich as directed, gently press it with your palm, put it in a baking sheet lined with silicon mat and pop in the oven until cheese melts and bread is golden brown.
