Nat'l Apple Month: Easy & Healthy Lunch Salads


August is National Apple Month and it's the perfect time to celebrate the healthy freshness of apples! Though an apple is great to eat on its own, you can increase its health benefits by combining it with other superfoods in a lunch salad.

Below are great salad recipes that celebrate the flavors and crisp goodness of apples! 


Chicken Apple Pasta Salad Recipe (Landeelu)

"When I was growing up every spring my mom and I would drive to Utah to spend some time with my extended family.  We typically had a big family gathering and that always involved food!  My Aunt Lisa brought a brand new dish and every single one of us was very skeptical when she told us she brought Chicken Apple Pasta Salad.  Say what?  I had never heard of eating chicken and apples together and thought it was just plain weird!" 

"I was only 13 at the time so I know I hadn’t experienced much!  I remember my mom giving me that look like “Be polite and take some.”.  I did and instantly fell in love with it!  The chicken and apples work really well together.  Plus the grapes and celery give it some great crunch.  It’s a unique salad that I’m sure everyone will love!  Keep this bookmarked as I’m sure it will quickly become your favorite pasta salad recipe".


  • Corkscrew Pasta
  • 2 cups Cooked Chicken Cubed
  • 2 cups Red Grapes Sliced in Half
  • 2 ribs Celery Sliced Thin
  • 2 medium Granny Smith Apples
  • 1 1/2 cups Mayonnaise
  • 2 TBSP Honey
  • 2 TBSP white vinegar
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1/2 tsp Poppy Seeds

Apple Pomegranate Almond Salad with a Creamy Lemon Poppyseed Dressing (The Recipe Critic)

A mouthwatering salad with crisp apples, pomegranate, almonds, feta cheese and fresh spring greens.  The Creamy Lemon Poppyseed dressing is TO DIE FOR!  You are going to love this salad!

  • 6 ounces spring greens
  • 1 cup sliced almonds
  • 2 Apples of choice, chopped (I used ambrosia)
  • ½ cup crumbled Feta Cheese
  • ¾ cup pomegranate seeds
  • Creamy Lemon Poppyseed Dressing:
  • ⅓ cup mayonnaise
  • ¼ cup 2% milk
  • 3 Tablespoons Sugar
  • 4 teaspoons cider vinegar
  • 1 Tablespoon Lemon Juice
  • 2 teaspoons poppyseeds

  • 1 cup fresh blueberries
  • 1/4 cup purple onion (finely chopped)
  • 1/2 cup dried cranberries

  • 1 apples (large, chopped into bite-size pieces)
  • 1 tbsp lemon juice
  • 1 cup greek yogurt
  • 1/4 cup honey
  • 1 tbsp lemon juice
  • 2 tsps apple cider vinegar
  • 1 tbsp water
  • 1 tbsp poppy seeds
