Sandwich is always a go-to grub for a quick lunch or snack. This National Sandwich Month, it's a great idea to learn new recipes and give new life to your everyday sandwich varieties.

In most households, it's common to make sandwiches out of last night's dinner, be it roast beef, turkey or salad greens. Making a sandwich is a good way to use up leftover rotisserie chicken. Think of bread and rotisserie chicken as a blank canvas that can be culinary masterpiece you want it to be!


Award Winning Chipotle Chicken Grilled Cheese Sandwich (Gimme Delicious Food)

This Award Winning Chipotle Chicken Grilled Cheese Sandwich from Gimme Delicious Food is a great recipe to make if you're looking for a flavor-packed sandwich the whole family will love. You can substitute the homemade Chipotle sauce with a the instant kind, but making your sauce from scratch is definitely worth it!

"This recipe requires 1 cup of shredded chicken. You can use any type for pre-cooked shredded chicken you may have on hand or you can use my quick and easy recipe for making shredded chicken."


  • 1 cup cooked chicken (recipe below)
  • 10-12 slices of Emmi Le Gruyere
  • ½ onion sliced
  • 2 tablespoon butter (divided)
  • 4 slices of bread

Shredded chicken

  • 1 medium boneless chicken cutlet
  • ¼ cup water
  • 1 teaspoon oil
  • salt and pepper to taste

Chipotle Sauce

  • 1 chipotle chile in adobo sauce plus 1 tsp. sauce (canned)
  • ½ cup mayonnaise
  • ⅓ cup plain Greek yogurt
  • ¼ cup chopped cilantro
  • ¼ tsp. ground cumin
  • ¼ tsp. dried dill
  • Kosher salt, to taste

Rotisserie Chicken Club Wrap (Blog Chef)

If you're looking for a sandwich that is yummy and tasty but doesn't pack on the pounds, try this Rotisserie Chicken Club Wrap from Blog Chef. You can use wholewheat tortilla instead of white flour tortilla to add fiber. You can also substitute low-fat mayonnaise for the regular kind.

"What makes these wraps even more delicious is a garlic mayonnaise that is prepared. This recipe uses the meat from a cooked rotisserie chicken to save time. I like to serve these wraps with chips. Enjoy."


  • 1 (2 1/2 pound) rotisserie chicken (skin and bones discarded, meat removed and chopped into bite-sized pieces).
  • 4 (10 inch) flour tortillas
  • 4 slices Swiss cheese
  • 4 slices tomato
  • 2 romaine lettuce leaves (turn into pieces)
  • 8 slices bacon (cooked until crispy and crumbled)

Garlic Mayonnaise

  • ¾ cup mayonnaise
  • 3 garlic cloves (minced)
  • 2 ½ tablespoons lemon juice
  • ¾ teaspoon salt
  • ½ teaspoon ground black pepper

Chicken Bacon Avocado Sandwich (Natasha's Kitchen)

Natasha's Kitchen has a great, flavorful recipe called Chicken Bacon Avocado Sandwich. It's lovely packet made of chicken, bacon, cheese, avocado and vegetables all sandwiched between pieces of focaccia. The recipe also features a lovely mayo mustard sauce that gives the sandwich a unique kick!

"This is a copycat of Kneader's turkey bacon avocado sandwich except we subbed the turkey for rotisserie chicken. The copycat sauce was just as good and has just 3 simple ingredients!"

Mustard Mayo (Kneaders Sauce Copycat)

  • ½ cup real mayo
  • 2 Tbsp sour cream
  • 2 tsp yellow mustard

Sandwich Ingredients (for 2 large sandwiches):

  • 6 oz chicken breast from a rotisserie chicken, hand pulled
  • 4 strips cooked bacon
  • 2 slices provolone cheese
  • 2 large lettuce leaves
  • 4-6 slices tomato
  • ¼ small red onion, thinly sliced
  • Salt & pepper
  • 1 avocado, peeled, pitted and sliced
  • Fresh focaccia bread (see notes)

Ludy's Kitchen Cooking Tip:

Leftover rotisserie chicken can be used as is, without reheating, if you're going to make it a filling for sandwiches. Using cold chicken will keep the vegetables in your sandwich crisp and fresh.


Make cooking a lot easier and more enjoyable by using good quality silicone baking mats. Not only are silicone mats sturdy and durable. Because they're non-stick, you can also cut your clean-up time in half.
