Colorful Bell Pepper Pasta Salad (The Healthy Foodie)

The pasta is mixed with the power house flavors of red, yellow and orange bell peppers, tofu, Emmenthal cheese, and olives. Parsley and garlic add a nice punch to the dish, while the simple dressing made of olive oil and zaatar binds the flavors together.

  • 12 kalamata olives, chopped
  • ½ cup fresh parsley, finely chopped
  • 1 garlic clove, crushed
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp zaatar
  • 1 tsp olive oil

Ludy's Kitchen Healthy Cooking Tip: 

Make your pasta salad extra healthy by sprinkling it with some healthy, toasted nuts. Put nuts on a non-stick baking sheet and pop in the oven. When you start to smell the aroma of nuts, you'll know it's ready.
