Summer is here and many are flocking to the park to enjoy nature and warm sunshine! Of course, no picnic is ever complete without your favorite food on-the-go. 

We asked you, our Ludy's Kitchen community, about your favorite picnic food and fried chicken came out on top! There's really nothing more satisfying on a picnic day like a freshly cooked fried chicken, crispy on the outside and juicy on the inside.


Super Crispy Chicken Tenders (Dinner then Dessert)

Dinner then Dessert has a great recipe called Super Crispy Chicken Tenders. This is a great recipe for foodies who love their fried chicken extra crunchy and super flavorful. This treat is a lot similar to that of a popular fried chicken store chain, but since this one is homemade, you could control what exactly goes into your food.

"Super Crispy Chicken Tenders made with a buttermilk marinade that makes them really tender and the crispiest crust with KFC flavored spices."

  • 4 chicken breasts boneless skinless
  • 1 cup buttermilk
  • 1 teaspoon hot sauce
  • 2 large eggs beaten
  • 2 cups flour
  • 2 1/2 teaspoons salt
  • 3/4 teaspoon pepper
  • 1/8 teaspoon paprika
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon baking powder
  • canola oil for frying

Baked Popcorn Chicken Bites (A Simple Palate)

This Southern Fried Chicken recipe from The Silly Girl's Kitchen is a simple yet lovely dish you can make not just for a picnic, but for any occasion or lack thereof. The garlic powder and onion powder add a subtle but distinct flavor to this fried classic chicken recipe.   

"Crispy on the outside, juicy and tender on the inside. Truly finger licking good! And, me being well… me. I added a little something-something to the mix to make this chicken dinner (or lunch, I don’t judge) over the top!"


  • 3 eggs
  • 1/3 cup milk
  • 1/4 cup buffalo sauce
  • 1 whole chicken cut up into parts (or 8 pieces of your favorite parts)
  • 1 teaspoon kosher salt
  • 25 cracks black pepper divided
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 cups self-rising flour

Ludy's Kitchen Cooking Tip: 

Keep fried chicken crunchy by packing it inside a paper bag. Avoid packing very hot fried chicken pieces in an airtight container - this would create moisture which would affect the crispiness of the chicken.  

Make cooking a lot easier and more enjoyable by using good quality silicone baking mats. Not only are silicone mats sturdy and durable. Because they're non-stick, you can also cut your clean-up time in half.
