Pumpkin Apple Pie Cookies

It's the season to give thanks! And there's no better way to appreciate the good things in life than with a simple homemade feast with family and friends. But life should not only be celebrated during Thanksgiving. Gratefulness for the blessing of bounty and genuine love should be practiced every day of the year.

Along with roast turkey and stuffing, pumpkin pie is symbol of Thanksgiving feast. But if your family prefers something new, baking pumpkin pie-flavored and inspired cookies is a great idea. 


Vegan Pumpkin Sugar Cookies (Minimalist Baker)

"Tender, fluffy, vegan pumpkin sugar cookies that require just 1 bowl! Super fluffy, simple preparation, and perfect for fall!"



  • 1/2 cup (1 stick) vegan butter (such as Earth Balance), softened*
  • 1/2 cup organic cane sugar + more for topping
  • 1/4 cup brown sugar
  • 1 tsp pure vanilla extract
  • 1/4 cup pumpkin puree (or sub pumpkin butter and hold back 1 Tbsp of cane sugar)
  • 1 1/2 cups + 1 Tbsp unbleached all-purpose flour (sub up to 1/3 whole-wheat pastry)
  • 1/2 Tbsp cornstarch or arrowroot powder (for thickening/binding)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 teaspoon pumpkin pie spice
  • 3/4 tsp ground cinnamon
  • 1 Tbsp unsweetened almond milk (or other non-dairy milk)

FROSTING (optional)

  • 1/2 cup (1 stick) vegan butter, softened
  • optional: 1 1/2 Tbsp pumpkin butter*
  • optional: 1/2 tsp vanilla extract
  • 2 1/2 - 3 cups powdered sugar
  • 1/4 tsp each ground cinnamon and pumpkin pie spice
  • Splash non-dairy milk

Soft and Puffy Pumpkin Spice Honey Cookies (Averie Cooks)

  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 1 large egg
  • 1/4 cup honey (I used clover from TJs)
  • 2 tablespoons pumpkin pie spice (yes tablespoons, not teaspoons)
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons corn starch
  • 1 teaspoon baking soda
  • pinch salt, optional and to taste

Pumpkin And Apple Pie Sugar Cookies (Erica's Sweet Tooth)

"The pumpkin was flavored with pumpkin emulsion and pumpkin pie spice, while the apple was spiced with some ground cinnamon and apple cider drink mix."

For the pumpkin pie sugar cookie dough:

  • 1-1/2 cups butter
  • 2 cups granulated sugar
  • 2 eggs
  • 2 egg yolks
  • 3 tsp pumpkin emulsion
  • 2 tsp vanilla extract
  • 4 cups flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp pumpkin pie spice

For the apple pie sugar cookie dough:

  • 1-1/2 cups butter
  • 2 cups granulated sugar
  • 2 eggs
  • 2 egg yolks
  • 5 tsp vanilla
  • 4 cups flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 2 tbsp powdered apple cider drink mix

Ludy's Kitchen Cooking Tip: 

Want extra chewy cookies? After baking, leave cookies on the baking sheet for five minutes before transferring to a cooling rack. This will allow the cookies to absorb moisture while hot. 


Make cooking a lot easier and more enjoyable by using good quality silicone baking mats. Not only are silicone mats sturdy and durable. Because they're non-stick, you can also cut your clean-up time in half.
